Gluten Free Steak & Peppers

GF Steak & Peppers
Ingredients:
1 cup white long grained rice, cooked
1 1lb Strip Sirloin Steak cut into slices inch thick 2 inches long
1 cup HomeMade GF Beef Broth
1 tbl vegetable oil
1 tbl butter or margarine
2 cloves garlic, minced
1 medium onion, sliced potato chip style
1 large tomato cut into inch wedges
1 large green pepper cored and sliced lengthwise
¼ cup water
¼ cup Soy sauce
2 tsp corn starch

Comment: We use rice often in preparing our meals switching from Chinese, Cajun, Italian, Polish soups to Mexican dishes, and here's a simple, tasty combination of steak and peppers over rice that you will enjoy.

Preparation:
  1. Prepare rice according to instructions and afterwards, rinse in cold water, set aside.
  2. In a 12" fry pan with lid add vegetable oil & 1 tbl butter and under high heat quickly pan-fry the steak rare (it will be cooked longer in the liquid).
  3. Add garlic, beef broth and simmer covered for 25 minutes.
  4. Add onions and peppers, cover and cook for 5 minutes.
  5. Mix together the water, Soy sauce and corn starch (break up any lumps) stirring it into meat mixture and continue cooking over low heat until mixture thickens. Add tomatoes gently stirring them into the mixture and allow to heat 3 minutes.
  6. Serve steak and peppers over individual rice beds.
