Comment:There are today multiple suppliers of waffle mix all of which are good, quicker and easier to make vs. starting from scratch but lacking a premix, here's a Good Housekeeping Cookbook waffle recipe using GF flour in place of regular flour and you'll need to add a small amount of Xanthan Gum that should be a staple in your GF pantry. If using a GF premix, follow directions on package but see below for adding apple slices, blueberries, etc. |

Ingredients: 1 3/4 cups all-purpose GF flour 2 tsps Xanthan gum 1 tsp double -acting baking powder 1 tsp baking soda 1/2 tsp salt 2 cups buttermilk (if not in stock then to make add two tlbs white vinegar to 2 cups of regular milk, stir and let sit for 10 minutes) 1/3 cup vegetable oil 2 eggs Preparation: 1. Preheat waffle iron in accordance as manufacturer directs. In a large bowl with whisk mix flour, baking powder, baking soda and salt 2. Add buttermilk, vegetable oil and eggs to flour mixture and mix until thoroughly blended 3. Pour batter into center of iron until it spreads to about 1 inch from edges. 4. Cover and bake as manufacturer of iron suggests but do not lift cover during baking time 5. When 'steam' has lessened loosen top and remove baked waffle carefully with fork.
